2 1/2 lb. red potatoes, cooked and cut into bite-size pieces
1/2 lb. bacon, cooked and crumbled
1 medium onion, diced
3 stalks celery, chopped
8 c. milk
3 c. water
4 chicken bullion cubes, dissolved in 1 c. potato water
1 tsp salt
1 tsp pepper
3/4 c. butter
3/4 c. flour
1/4 bunch parsley
1 c. whipping cream

Directions:
Directions:
Saute onions and celery in bacon grease. In a large pot, place water, milk, chicken bullion water, salt, and pepper. Cook until very hot, but do not boil. In a small heavy saucepan, melt the butter, add flour, cook 2-3 minutes. Add to soup, slowly, stirring constantly until thick and creamy. Stir in parsley, potatoes, and cream. Top with crumbled bacon.
