3-4 large peppers (any colour)
6-8 medium tomatoes
3/4 tsp. sugar
salt and pepper
1/2 red onion
3 tbsp. olive oil
3 tbsp. wine vinegar
6-8 oz stuffed olives

Directions:
Directions:
Roast peppers, peel and cut into long strips. Slice tomatoes, lay on platter and sprinkle with sugar, salt and pepper. Slice onions into thin rings and lay over tomatoes. Top with peppers, tuck in olives.

Whisk oil and vinegar and pour over salad. Marinate at room temperature for 2-3 hours.
