1 1/2 lbs Pork Back Ribs (cut, by butcher into 1 1/2 " to 2" lengths)
Seasoning Salt
1/4 C White Wine
Water
1/4 C Vegetable Oil
4 Garlic Cloves - crushed
2 T Course Salt
4 T Parsley - cut up fine.

Directions:
1. Pre-heat oven to 350º
2. Slice through ribs - to make single small ribs. Season with seasoning salt and place them in a baking dish with the wine and the water to a depth of 1/2 ".
3. Cover with foil and bake ribs for 40 to 60 minutes until tender. Drain ribs thoroughly and pat dry.
4. Pour vegetable oil into a non stick skillet to a depth of 1/4" and fry the ribs until crispy.
5. Drain ribs on paper toweling
6. Fry the garlic in the remaining oil until aromatic.
7. Place the garlic, ribs, parsley and course salt in a paper bag and shake vigorously. Serve immediately.
