1/2 cup margarine or butter
1/2 cup flour
1/2 tsp salt
1/4 tsp pepper
2 cups milk (adjust for desired consistency)

Melt butter in saucepan over low heat. Stir in flour, salt and pepper until smooth. Gradually stir in milk. Heat to simmer over medium to high heat, stirring constantly to prevent scorching.

Mom would use this recipe to make creamed potatoes, and occasionally add ham. Stir in chopped cooked potatoes and/or ham to the finished gravy and heat thoroughly. -Bev
