Ingredients: Pork: 1 lb. pork tenderloin Kosher or sea salt, as needed Fresh ground black pepper, as needed Garlic powder, as needed Fat free cooking spray, as needed
Glaze: 1/2 c. orange marmalade 2 Tbsp. honey 1 Tbsp. plus 1 tsp. low-sodium soy sauce 1 1/2 Tbsp. mustard

Directions:Preheat oven to 350º Place pork on a foil-lined baking sheet and season lightly with salt, pepper and a pinch of garlic powder In a small saucepot, combine orange marmalade, honey, soy sauce and mustard Pour approximately 1/4 of the glaze in a small bowl and brush over pork tenderloin Place pork in oven for 15 minutes Turn pork over once and brush any leftover glaze on sheet pan back onto the pork Continue cooking pork for approximately 17 - 22 minutes (oven times will vary) until pork is just firm and cooked throughout (pork should be slightly pink in the thickest portion) Remove pork from the oven While the pork is cooking, bring unused glaze in saucepot to a gentle simmer over medium-low heat Reduce heat to low Add a little more of the glaze to the top of the pork and broil on high for approximately 2 - 3 minutes or until glaze starts to caramelize Gently transfer pork and juices from the pan onto a plate Cover very loosely with foil and allow to rest for 5 minutes to seal in the juices Serve with a Tbsp. of glaze |
