5 tbsp. Brown Sugar
2 tbsp. Paprika
1 tbsp. Lemon Pepper
1 tbsp. Chili Powder
1 tbsp. Granulated Garlic
2 tsp. Seasoned Salt
1 tsp. Onion Powder
¼ tsp. Crushed Red Pepper
¼ tsp. Ground Cloves
¼ tsp. Ground Nutmeg
5 to 6 lb. Pork Butt Trimmed
3 cups Apple Juice
½ cup Apple Brandy

Directions:

Mix all the dry ingredients and rub into the trimmed pork butt. Cover and marinate in the refrigerator overnight, if possible. If not, let it marinate at least 1 hour. If refrigerated, let it sit at room temperature for at least 30 minutes before cooking.

Place the pork on a smoker grill rack over a water pan (Sliced apples and oranges may be added to the water pan for a fruity steam.) With the lid down, smoke the meat over medium coals, turning every hour, for 6 to 8 hours or until wiggles easily when pushed.

After 3 hours, baste with apple juice and apple brandy mixture once an hour, also turning the meat.

Let the meat sit covered for 20 to 30 minutes before serving.
