1/2 cup butter, softened
1 cup sugar
2 eggs
1-1/2 cups flour
3 tbsp poppy seeds
1 tbsp grated lemon rind
1 tsp baking powder
1/4 tsp salt
1/2 cup milk
1 lemon, squeezed - reserved for lemon syrup below
2 cups of cranberries - optional

Lemon Syrup:
1/3 cup icing sugar
1 tsp grated lemon rind
1/3 cup lemon juice - or freshly squeezed lemon

PREHEAT oven to 325F

PREPARE greased loaf pan

BEAT butter with sugar until light and fluffy; beat in eggs

WHISK In separate bowl the flour, poppy seeds, lemon rind, baking powder and salt; stir into butter mixture

SPREAD in greased loaf pan

BAKW for 1 hour or until toothpick comes out clean

Lemon Syrup: In bowl, warm together sugar and lemon rind and juice until sugar dissolves. With fork, pierce hot loaf in 12 places right to bottom; pour lemon syrup over loaf.

Let loaf cool in pan for 30 minutes; turn upside down onto rack and let cool completely.
