1 lb. Ground Turkey or Ground Chicken
Ground Italian Style Turkey may add for extra protein
Fennel Seeds

2 c. Mozzarella Shredded Cheese, Part Skim
Fat Free or Low-fat Cottage Cheese or Low-fat Ricotta Cheese
Fat Free or Low-Fat Cream Cheese
2/3 c. Shaved Parmesean or Manchego Cheese
2 Eggs
Basil
Oregano

Sauce (from scratch, recipe below, or use store-bought marinara sauce)
Tomato Sauce
Italian Seasonings (fresh basil, oregano, thyme, rosemary)
2 Cans Stewed Tomatoes, Diced or 2 Fresh Diced Tomatoes
2-3 Tbsp. Brown Sugar or Stevia Blend
Garlic, chopped
1 White or Yellow Onion
1/2 Green or Red Bell Pepper
Sliced White Mushrooms
Salt & Pepper to taste

Eggplant, thinly sliced
Zucchini, thinly sliced

Cook lasagna noodles, according to box instructions, set aside.

Make sauce first since it takes the longest. Prepare all vegetables(sliced, diced, chopped). Combine in large pot tomato sauce,diced tomatoes, onions, garlic, bell pepper, mushrooms, herbs, salt, pepper, stevia blend. Bring to a boil, then turn heat down to simmer. Stirring occasionally. Sauce will need about half hour to simmer to blend all flavors. Can prepare sauce the day before for maximum flavor.

Brown ground turkey or chicken in a large frying pan, may add fennel seeds. Drain meat and add to sauce.

In a large mixing bowl blend 2 eggs, basil and oregano. Then add 1 c. mozzarella cheese, cream cheese, cottage or ricotta cheese, 1/3 of Parmesan cheese, mix together until well blended.

If adding zucchini and eggplant, first sauté them in a pan separately and set aside.

In a 11/14 glass or nonstick casserole pan spread a thin layer of the meat sauce. Then spread 1/3 of the cheese mixture on top of sauce layer. Then add a layer of noodles. Then spread a layer of meat sauce. May add zucchini and eggplant slices in this layer. Then add another layer of cheese mixture. Add noodle layer. Then repeat meat sauce, cheese, then noodle layer. Top the last noodle layer with thin layer of meat sauce and 1 cup of mozzarella cheese and remaining 1/3 c. parmesan cheese.
Cover pan with heavy duty tinfoil to fully seal heat in. Bake for 45 minutes at 375 degrees. Uncover and bake for 15 more minutes, or until top is golden brown.

Let cool for 15-30 minutes. Serve and Enjoy!
