1 rack of meaty beef ribs (about 5, 6 ribs)
Kosher Salt
Fresh cracked black pepper
Cayenne pepper

Directions:
Directions:
Pre heat oven to 300 and set rack to middle position
Remove the rib membrane by prying up a piece at the corner with a fork then grabbing it with a paper towel and removing it.
Generously season the ribs with the kosher salt and cracked black pepper. Season the ribs with the cayenne to taste.
Place in a baking dish meat side down and cook for 1 hour and 15 minutes. Remove from oven and turn over meat side up for another 1 hour 15 minutes. Remove and let rest about 10-15 minutes. Cut the ribs into individual pieces and serve.
*You can also smoke these (indirect heat) over apple wood or hickory as you would regular ribs for about the same time.
