1 pound of red kidney beans, soaked for 1 hour in hot water with a tablespoon of baking soda
½ rack of spare ribs or country style ribs, cut into single ribs and then hacked in half with a cleaver
1 chopped onion and 4 garlic cloves minced
2-4 packets of Sazon of choice
6-8 cups of water
1 cup Marinara sauce or equal parts canned or fresh tomatoes
Cumin, oregano, garlic powder, salt, and pepper to taste

Directions:
Season the ribs all over with salt and pepper. Start browning the ribs in a large Dutch oven over medium heat with 2 tablespoons of vegetable oil. Brown both sides and remove from the pot. Continue until all ribs are cooked this way. Add the onion and garlic and scrape the bottom with a wooden spoon. Cook for a few minutes. Add 6 cups of water, oregano to taste, Sazon packets to taste, seasonings to taste, Marinara sauce, drained beans, and ribs. Bring to a simmer and put on the lid. Simmer on medium low for 1 hour. Remove lid and cook another 1-1 ½ hours until ribs are very tender and beans are fully cooked. Add more water as needed and desired. Adjust seasoning as you go. You can remove the ribs and shred the meat when cool enough to handle or leave as is.
