1 beaten egg white
1 Tbsp. milk
4 tsp. sinpped fresh basil or 3/4 tsp. dried basil, crushed
1/8 tsp. pepper
1 (6 oz.) can skinless, boneless pink salmon, drained and flaked
1/2 c. finely crushed wheat crackers
1 small carrot, finely shredded (1/4 c.)
2 - 3 Tbsp. yellow cornmeal
1 Tbsp. cooking oil
3 hamburger buns, split and toasted
Tomato sliced (optional)
Red onion, thinly sliced (optional)
Mayonnaise (optioanl)
Lemon wedges (optional)

Directions:
Directions:
Combine egg white, milk, basil and pepper
Add salmon, wheat crackers and shredded carrot
Mix well
Shape salmon mixture into 3 (3/4 inch) thick patties
Coat patties with cornmeal
In a skillet cook the patties in hot oil over medium-low heat about 6 minutes or until golden brown, turning once
Serve on toasted buns with tomato, onion and mayonnaise, if desired
Serve with lemon wedges, if desired
