Crab:
1 1/2 c. water
1/2 c. uncooked wild rice
1 lb. lump crabmeat, drained
3/4 c. dry bread crumbs
1/2 c. chopped red bell pepper
1/4 c. minced shallots
1/4 c. mayonnaise
2 Tbsp. Dijon mustard
1 1/2 Tbsp. fresh lemon juice
1/2 tsp. salt
1/8 tsp. red pepper
2 large egg whites. lightly beaten
1/2 tsp. cumin
1/8 tsp. black pepper
4 tsp. olive oil, divided

Sauce:
1 red bell pepper
1/2 c. mayonnaise
2 tsp. sherry
1/2 tsp. garlic powder
1/2 tsp. salt
1/4 tsp. pepper
1/4 tsp. hot sauce

Directions:
Preheat oven to 450º
Crab:
Bring water to a boil in medium saucepan
Add rice and cover
Reduce heat
Simmer for 1 hour
Combine cooked rice, crab and next 11 ingredients
Divide mix into 8 (1 inch) thick patties
Heat 2 tsp. oil in nonstick skillet over medium heat
Cook patties for 4 minutes on each side

Sauce:
Place pepper on aluminum foil-lined baking sheet
Bake for 15 minutes or until pepper is blistered, turning once
Place pepper in Ziploc bag
Seal
Let stand 10 minutes to loosen skin
Peel pepper and discard seed
Process pepper and 1/4 c. mayonnaise in a food processor until smooth
Stir in remaining mayonnaise, sherry and other ingredients
