2 apples, one red and one green or yellow apple, cored and chopped into small pieces (do not peel)
2 oranges, peeled, trimmed and sections chopped in half
2 tangerines, peeled and separated into sections
About 2 cups of grapes, mixed red and green, halved and any seeds removed
1 kiwi fruit, sliced or 1 star fruit, sliced (optional)
1 cup pecans
1/2 cup walnuts
1 cup coconut
1/4 - 1/3 cup of sugar (to taste)
Mayonnaise to cover, about 3/4 - 1 cup (to taste)

Chop all fruits (lots of chopping). You can use Fruit Fresh or a little lemon juice over the apples to keep them fresh while you finish the salad. If the tangerines are tart enough, they will stop the apples from browning. The sugar is to taste, the amount needed depends on the tartness of the tangerines and whether or not lemon juice was added, start with about 2 tbsp. of sugar. Stir in enough mayonnaise to lightly coat the fruits and nuts. Serve immediately, the salad will last in the refrigerator until supper on Christmas Day, then toss it.

This is one of those recipes that you always have at Christmas, that only a few people like, but you can't not have it because Christmas is not right without it.
