1 recipe of no knead bread dough mixed and unrisen (1 teaspoon of salt instead of 1 ½ teaspoons. Plus ½ teaspoon of sugar)
½ packed cup diced pancetta and pepperoni, sautéed until golden brown. Rendered fat kept.
Course black pepper to taste
After dough is initially mixed, add the cooled cooked meats and the rendered fat. Add some black pepper to taste. Re mix the dough until the meats are fully incorporated. Proceed with recipe as normal and cook as usual minus 5 minutes of baking time (overnight rise, shape, and bake in Dutch oven).
*For a real authentic taste, brush the bread before baking with some of the pork lard drippings.
