2 cups all purpose flour
½ cup whole wheat flour
¼ cup of Greek yogurt
1 ½ teaspoons salt
2 teaspoon sugar
2 teaspoons yeast
1 tablespoon of olive oil
1 cup of warm water

Directions:
Directions:
In the bottom of standing mixer, add the water, yeast, oil, salt, sugar, and yogurt. Mix for about a minute. Add the flour and mix on medium speed for about 5-7 minutes. Add a little oil to the bowl and toss the dough around to coat. Cover the mixing bowl and let rise 1 hour.
Put the risen dough on a floured surface and divide into 8 pieces. Roll each piece into a ball and cover for 10 minutes. Press out the dough with your hands. Let rest another 10 minutes. Roll out each piece of dough with a rolling pin until it’s about a 7 inch round.
Grill or pan cook in a cast iron skillet over medium heat for a couple minutes on each side until spotted brown all over. You can brush them with a little olive oil before you cook them for a variation. Continue to cook until all the pitas are done. Eat or freeze.
