7-9 pounds cucumbers in chunks (about 2 gallons)
2-3 cups pickling lime
3 cups vinegar
6 cups sugar
1 T canning salt
1 tsp. ginger
1 tsp. cloves

Directions:
Directions:
Peel cucumbers, slice in half lengthwise, and scoop out seeds, then slice in chunks; soak 12-24 hours in lime mixed in 2 gallons water. Drain, rinse well, soak in ice cold water for 3 hours. Combine vinegar, sugar, 3 cups water, canning salt, ginger, and cloves. Bring to boil. Add cucumbers and soak 6 hours or overnight. Bring to boil, simmer 30 minutes. Add red or green food coloring, if desired. Fill hot jars with pickles and juice and seal.
