2 cups packed grated raw potatoes
1/2 tsp. salt
1 egg, beaten
1/4 cup grated onion

Filling:
1 heaping packed cup grated cheese
1 medium cauliflower, broken into small flowerets
1 medium clove crushed garlic
1 cup chopped onion
3 tbsp. butter
Dash of thyme
1/2 tsp. basil
1/2 tsp. salt

2 eggs
1/4 cup milk
Black pepper
Paprika

Directions:
Directions:
Set the freshly grated potatoes in a colander over a bowl. Salt it & leave it for
10 mins. Then squeeze out the excess water & add it to the remaining ingredients
for the crust. Pat it into a well-oiled 9-inch pie pan, building up the sides with lightly
floured fingers. Bake for 40-45 mins.at 400 degrees until browned. After the first 30 mins.
brush the crust with a little oil to crispen it.

Turn oven down to 375 degrees.

Filling:
Sauté onions & garlic, lightly salted, in butter for 5 mins. Add herbs & cauliflower& cook
covered, 10 mins., stirring occasionally. Spread half the cheese into the baked crust
then the sauté, then the rest of cheese.
Beat the 2 eggs & 1/4 cup milk together with a little pepper. Pour over the pie & dust
with paprika. Bake 35-40 mins-until set at 375 degrees.
