3 whole chicken breasts, split, skinned and boned
2 eggs, lightly beaten
1 tsp. salt
1/4 tsp. pepper
3/4 c. fine dry bread crumbs
1/2 c. vegetable oil
2 (8 oz.) cans tomato sauce
1/4 tsp. garlic powder
1/4 tsp. chopped basil
1/2 c. Parmesan cheese
8 oz. shredded mozzarella cheese
*1 shallow baking pan, prepared with cooking spray

Directions:
Directions:
Combine eggs, salt and pepper. Dip chicken into egg mixture, then bread crumbs. Heat vegetable oil in large frying pan, and quickly brown on both sides. Remove to shallow baking pan. Pour excess oil from frying pan. Add tomato sauce, basil and garlic to frying pan. Bring to a boil, reduce heat and simmer for 10 minutes. Pour over chicken, sprinkle with Parmesan cheese. Cover dish with foil and bake for about 45 minutes. Remove, uncover and sprinkle mozzarella cheese over the chicken. Bake a few minutes longer until cheese is melted and bubbly.
