2 1/2 c. all-purpose flour
1 tsp. salt
1 c. shortening
1 egg yolk
1/2 c. milk
1 c. cornflakes
8 - 10 tart baking apples, peeled and sliced (8 c.)
1/2 c. sugar
1 tsp. ground cinnamon
1 egg white
1 Tbsp. water
Sifted powdered sugar or whipped cream (optional)

Preheat oven to 375º
In a large mixing bowl stir together the flour and salt
Cut in shortening until mixture resembles coarse crumbs
Lightly beat egg yolk in a glass measuring cup
Add enough milk to egg yolk to make 2/3 c. liquid total; mix well
Stir egg yolk mixture into flour mixture; mix well
Divide dough in half
On a floured surface, roll half the dough to an 18 x 12 inch rectangle; fit into and up sides of a 15 x 10 x 1 inch baking pan
Sprinkle with cornflakes; top with apples
Combine sugar and cinnamon; sprinkle over apples
Roll remaining dough to a 16 x 12 inch rectangle; place over apples
Seal edges; cut slits in top for steam to escape
Beat egg white and water brush over pastry
Bake for 50 minutes or until golden
Let cool on a wire rack
Serve warm or cool, topped with powdered sugar or whipped cream
