6 slices bacon
1/2 c. finely chopped red onion
2 c. water
1/2 c. honey
1/2 c. red wine vinegar
1 T. Tabasco sauce (optional)
1 1/2 T. corn starch
2 T. Dijon mustard

Directions:
Directions:
Fry the bacon until crisp, then crumble and set aside. Pour 1/4 c. of the bacon drippings into a sauce pan over medium-high heat. Add the onion and cook, stirring, until the onion begins to brown. While the onion is caramelizing, in a mixing bowl, combine the water, honey, red wine vinegar, and Tabasco. Using a whisk, mix the ingredients. Add the cornstarch, and whisk well. After the onion has caramelized, add the Dijon mustard to the onion and mix together. Add the honey-vinegar mixture to the onion and mix. Continue stirring until the mixture thickens and comes to a boil. Remove from the heat and garnish with the crumbled bacon. Cool to room temperature and store in the refrigerator until need. Use a double boiler to reheat.
