1 cup chopped pecans
5 apples, peeled and sliced thin
2 tsp. cinnamon
¼ cup sugar
4 eggs
2 ½ cups sugar
1 cup oil
½ cup orange juice
2 tsp. vanilla
½ tsp. salt
3 cups flour
1 ½ tsp. baking powder
1 ½ tsp. baking soda

Directions:

Sprinkle the apples and nuts with cinnamon and sugar. Set aside.

Mix eggs, sugar, and oil with an electric mixer. Add orange juice, vanilla, flour, salt, baking powder and baking soda. Mix for 1-2 minutes, until blended.

Grease and flour a large Bundt pan.

To prepare 5 layers: pour batter, then apples, batter, apples, batter, apples, ending with batter.

Bake at 350° for about 1 ½ hours, until a cake tester comes out clean. Cool on a rack.
