3 eggs (separated)
1 cup sugar
2 Tbsp butter (softened)
4 tsp flour
5 Tbsp lemon juice
1 Tbsp grated lemon peel
1 1/2 cups scalded milk (not boiling)
1/4 tsp salt
9" unbaked pie shell

Directions:
Preheat oven to 400º. Let egg whites warm to room temperature. In large bowl with electric mixer at medium speed beat sugar, butter and egg yolks until light and fluffy. Add flour, stir in lemon juice and peel. Stir until entirely incorporated. Gradually add hot milk - proofing mixture first so the eggs don't scramble.

In medium bowl with electric mixer at medium speed beat egg whites with salt until peaks form. With wire whisk fold meringue into milk mixture.

Put mixture unto unbaked pie shell - bake 10 minutes at 400º. Reduce heat to 325º. Bake 45 minutes longer or until a knife inserted in the center comes out clean.
