8 medium candy canes
12 oz. good semisweet chocolate bars or chips (2C.)
12 oz. white chocolate bars or chips, with cocoa butter

Finely crush candy canes using a plastic bag and rolling pin. Cover cookie sheet with foil. Melt semisweet chocolate in a double boiler or microwave on 50% power for one minute, stir every 30 seconds or as often as needed until melted. Gently melting prevents burning. Pour melted semisweet chocolate onto a 8x10" piece of foil. Refrigerate. Prepare the white chocolate peppermint layer. Melt the white chocolate in same method as semisweet chocolate. Stir in 3/4 of remaining crushed candy canes. Set mixture aside at room temperature (cool slightly) until semisweet layer is hard. The white chocolate should be a little soft but not liquid. Pour white chocolate mixture onto semisweet chocolate layer and gently spread over first chocolate layer. Sprinkle the rest of the crushed candy canes. Refrigerate to harden. Break hard candy by hand or cut with a knife into bark like pieces.
