3 cups chicken stock
3 tbsp butter
1/2 tsp saffron threads
1/4 tsp coarse kosher salt
2 cups couscous
1/2 cup toasted pine nuts
3/4 cup thinly sliced green onions
Salt and black pepper
1 lemon (optional)

Directions:
Directions:
Bring broth, 1 tbsp butter, saffron and salt to a boil.
Remove from heat and stir in couscous.
Cover and let stand for 10 minutes.
Fluff with fork, mix in remaining 2 tbsp of butter and and 1/2 green onions and nuts.
Season with salt and pepper.
Mound in bowl and sprinkle with remaining green onions and nuts.
Squeeze a lemon over the couscous if you wish.
