2/3 cup water from raisins
1 cup raisins
1 tsp. instant coffee

1/2 cup margarine
1 cup sugar
2 eggs
1 1/2 cup flour
1/2 tsp. baking powder
1/2 tsp. baking soda
1/2 tsp. vanilla
1 tsp. cinnamon
Directions:
Directions:
Boil the raisins in some water to soften. Drain and reserve the water. Dissolve the instant coffee in the raisin water.
Spread into a 10 " X 15" sheet pan and bake at 350º F for about 20 minutes.

Serve as is or dust with icing sugar.
