1 1/2 lb. beef tenderloin
salt/pepper
1 1/2 tbsp. butter
3 tbsp. flour
1 C. beef bouillon
1 onion, sliced
3 tbsp. sour cream
1 tsp. Dijon style mustard
egg noodles

Directions:
Directions:
Trim the meat of all fat. Season with s/p. Melt 1 1/2 tbsp. butter in a sauce pan; add flour and gradually add the beef stock. (Whisk to prevent lumps while adding the beef stock.) Simmer until the sauce is smooth and thickened. Set aside and keep warm. Heat in a large skillet 2 tbsp. butter; add sliced beef and sliced onion. Cook, shaking the pan and stirring, until evenly browned. The meat should remain pink in the center, 1-2 minutes. Remove the meat to a warmed platter. Return the sauce to medium heat, stir in the sour cream, mustard and salt/pepper to taste. Add juices from the cooked meat. Spoon the sauce over the meat and serve with noodles or rice. Sautéed mushrooms can also be added to the browning of the onion. Keep the mushrooms with the meat until you combine with the sauce.
