3 tbsp olive oil
1 small onion, chopped
1 lb fresh mushrooms, chopped
6 c chicken stock
1 c half and half
1 c heavy cream
salt and pepper to taste

Directions:
Directions:
Heat the olive oil in a heavy pan. Add the onions and stir over moderate heat until the onions are transparent. Add the mushrooms and cook, stirring another four minutes. Add the chicken stock and bring to a simmer. Let simmer for 15 minutes. Pour the mixture into a blender and puree until smooth. Return soup to sauce pan, Add the heavy cream and half and half and bring to a simmer. Let simmer for 10 minutes. Season to taste with salt and white pepper
