Barbecued Spare Ribs for a Party
4 lbs. spare ribs
1 lemon
1 onion
1 cup ketchup
4 tbsp. Worcestershire sauce
1 tsp. salt
Few drops of Tabasco
1 ¾ cups water
1 tbsp. chili powder
¼ cup water

PREHEAT oven to 450 degrees.
WIPE spare ribs with a damp cloth and cut down with sharp knife between the ribs so
they are easy to handle or have the butcher do it for you.
ARRANGE in a roasting pan with the fat down and place slices of lemon and onion
on top of the meat.
ROAST ribs for half an hour.
COMBINE ketchup, Worcestershire sauce, salt, Tabasco and 1 ¾ cups water.
MIX chili powder with ¼ cup water. Bring to a boil and pour over ribs when they
have been in the oven 30 minutes.
ROAST for 45 minutes more, basting frequently with a wooden spoon. (This is a good time to use a baster as it avoids burnt wrist and arms). If the sauce cooks down too much add some water. Watch heat and if ribs are getting too dark reduce oven heat.
SERVE with crusty bread and a green salad and hot rice.
NOTE: Reduce the amount of meat for fewer people but don’t cut down on sauce.
