1/2 bell pepper
2 cups chicken broth
3/4 tsp curry powder
4 green onions
2 6 oz jars marinated artichoke hearts, drained..reserving the marinade
1 cup rice
1/3-1/2 cup mayonnaise
15-20 stuffed green olives, sliced

Directions:
Directions:
Cook rice in broth as directed. Cool in large bowl. When cool, add green onion, bell pepper and olives. Cut artichoke hearts into quarters and add to rice mixture. In a small bowl, combine mayonnaise, marinade, and curry powder. Pour over rice and combine. Chill..

You can add cooked shrimp to this salad and you have a complete meal when served with tomato aspic which is included in this book. Especially nice to put in the center of a mold of tomato aspic.
