6 lb rump roast, lean pork loin, or beef brisket

Seasoning:
1 ½ tsp. Salt
1 ½ tsp. Pepper
2 Tbsp. Chile Powder
1 crushed Bay Leaf
2 Tbsp. Liquid Smoke

BBQ Sauce:
3 Tbsp. Brown Sugar
½ C. Water
2 Tbsp. Liquid Smoke
4 Tbsp. Worcestershire Sauce
3 tsp. Dry Mustard
2 tsp. Celery Seed
6 Tbsp. Butter or Margarine
dash of cayenne pepper

Mix seasoning well and rub on fat side of meat. Wrap roast, fat seasoned side up, in foil. Place in baking pan or dish and bake at 325° for 4 ½ - 5 hours.

If you are making a beef brisket it requires a longer cooking time. (13 hours at 300 degrees)

Combine sauce ingredients, and cook over medium heat. Bring to a boil, reduce heat and simmer 10 minutes.

When meat has completed cooking, removed from oven. Remove meat from foil
and juice and let cool. Remove fat and any gristle. Slice across the grain
approximately 1/4" thick slices. Add to previously prepared sauce, stirring occasionally as you re-heat meat to serving temperature.
