Vegetarian Baked Ziti Recipe

1 lb. ziti pasta
1 medium onion, chopped
2 garlic cloves, minced
1 (14 oz.) can crushed tomatoes
1 1/4 c. ricotta cheese
8 oz. mozzarella cheese, shredded
1/3 c. parsley, chopped
1/2 T dried basil
1/2 tsp. dried oregano
fresh ground black pepper
1/4 tsp. red pepper flakes
1/4 c. olive oil
1/4 c. breadcrumbs

Directions:
Directions:
Cook the ziti to just before al dente. Drain and pour cold water on it to stop cooking. Set aside.
Coat a 9x12 baking dish with cooking spray or olive oil and set aside.
In a skillet, heat the remaining olive oil to medium heat. Cook the onion until translucent.
Add the garlic and cook 1 minute. (Do not brown)
Add crushed tomatoes to skillet, including juice from the can.
Cook 3-5 minutes.
In a large bowl, mix ricotta and mozzarella.
Add parsley, basil, oregano, salt, red pepper, a few grinds of pepper, and mix together.
Add tomato-onion-garlic mixture, and mix well.
Add ziti to cheese mixture and toss well to coat the pasta.
Spoon the mixture into a baking dish.
Sprinkle the break crumbs and Parmesan cheese on top of the pasta.
Bake at 400º for 20-30 minutes, or until lightly browned.
Allow to rest 5 minutes before cooking.

This is a great meal to prepare in advance and then bake when you're ready to eat it. Also refreezes and reheats quite nicely. Carnivores and vegetarians alike seem to love it! We make it with low-fat cheeses to reduce calories.
