Original recipe:

3 ounces of Philadelphia Cream Cheese
1 egg yolk
pinch of salt
pinch of pepper
mince garlic
1/4 teaspoon baking powder
tart cheese like pecorino or parmigiano reggiano - small amount to taste


To make larger recipe:
12 ounces of Philadelphia Cream Cheese
2 egg yolks or whole egg
mince garlic
pinch of salt
pinch of pepper
1/2 teaspoon baking powder (or slightly more)
tart cheese pecorino or parmigiana reggiano

Do it all to taste!

Make: 30 "rounds" of light wheat bread , no crust (or whatever you like bread wise). Use a 1" glass (like a schnapps glass) or other item to cut out 1 inch diameter rounds.

Put under broiler at 500 degrees for 5-8 minutes maximum until they rise and just slightly start to burn, but don't really burn them!

*For larger recipe, make 60 "rounds".

So in the Caplan family while many of the women including my mother, Kit, sister Margi, sister in law Soiz, and grandmother Nana, loved to cook and did a lot of it they only followed the basics ingredients to necessarily step by step. Put simply, except for Soiz, they followed the essentials of the recipe and finished it off by cooking by feeling and instinct. I encourage you to do the same with the following recipes.
