1 lb. venison tenderloin, cut in 1" pieces
1/4 cup olive oil
3 cloves garlic, minced
1 1/2 cups italian bread crumbs
1/2 cup Parmesan cheese
salt and pepper
1/4 cup chopped parsley

Directions:
Directions:
Soak meat in milk overnight. Preheat broiler and set oven rack 6" from heat. Line pan with foil. Mix dry ingredients in bowl. Heat oil and garlic just enough to blend flavors. Pour into the dry mixture and mix. Stir in parsley. Dip meat into crumbs to coat, then place on foil. Broil on both sides until golden brown.
