1/2 c. olive oil
1/2 c. lime juice
1/2 c. tequila
1 onion, diced
2 cloves garlic, minced
4 jalapeņo peppers, chopped
1 side of lean pork spareribs, country style (about 3 lb)
6 c. brown rice, cooked
3 c. canned black beans, drained and rinsed
1 1/2 c. salsa

Directions:
Directions:
Mix the oil, lime juice, tequila, onion, garlic, and jalapeņo peppers together in a small bowl. Place the ribs, meat-side down, in a glass baking dish. Pour the
marinade over the ribs, coating each side completely. Cover with plastic wrap and refrigerate overnight. Preheat the oven to 375°F and bake the ribs for 60 to
90 minutes, or until tender. Mix the rice and beans together, top with salsa, and
serve with the ribs.
