1/2 lb lean ground beef
1 cup chopped green pepper
1 cup chopped onion
2 cloves garlic, minced
1 can (17 oz) del Monte whole kernel golden sweet corn
1 can (16 oz) kidney beans (low sodium) undrained
1 can (14-1/2 oz) del Monte original style stewed tomatoes (no salt added)
1 tbsp. chili powder
2 cups cooked rice

Directions:

In large skillet, brown meat with green pepper, onion and garlic; drain. Drain corn, reserving 1/3 cup liquid. Add reserved liquid, corn, beans, tomatoes and chili powder. Bring to boil. Reduce heat; cover and simmer 10 minutes. Serve with rice. Top with shredded cheese, if desired.
