Combine in Bosch:
6 1/3 c. wheat flour
1/3-2/3 c. vital wheat gluten
3 tbsp. yeast

Add:
3 1/2 c. warm water
1 can evaporated milk (warmed)

Mix well until smooth (usually about a minute-ish)
Let sponge for about 10 minutes (maybe a little longer if needed). It should grow in size and get small popped bubbles on top.

Add and mix well:
2/3 c. oil
2/3 c. honey
2 1/2 tbsp. lemon juice

Begin slowly adding (about 1 cup at a time):
6 c. wheat flour
2 tbsp. salt

Once it is all mixed, turn the Bosch up to speed 2 and mix for 8 minutes. Then spread a small amount of oil (about the size of a medium sized pancake when poured on the counter) and place the dough on top. Divide, shape, and place in oiled bread pans.

Let rise 30 to 50 minutes until it's the size you want it.

Bake at 350 for 25-28 minutes. Enjoy!
