Chicken with Ginger & Green Onions Recipe

Ingredients: Whole chicken Green onions 9-10 stalks Ginger the fresher, the better 1-1/2 tbsp salt 2 tbsp rice wine
4 tbsp vegetable oil 1-1/2 cups water (for steaming)

Directions:1. Make the marinade. Take 3 green onions and coarsely chop them. Cut off 5 slices of ginger root (with skin) and chop. Add to food processor with 1-1/2 tbsp salt and 2 tbsp rice wine. Finely chop.
Wash the chicken and rub with salt (inside and out) for a couple of minutes.
Spread the marinade evenly on the outside and inside of the chicken. Add ginger slices and green onion stalks inside the chicken for added flavour. Set the chicken aside for 1 hour at room temperature and let it marinate.
2. Make garnish Peel the skin off ginger root with a spoon. Thinly slice and finely chop ginger to make 2/3 cup. Remove tops and ends of 4 green onions. Slice in half lengthwise and then line up all the green onion halves. Thinly slice them at a diagonal. Mix the green onions and ginger in a small bowl.
3. Steam the chicken Put about 1-1/2 cups of water in the bottom of a large wok or steamer and heat to a low boil. Place steam basket inside and put chicken into it. Cover and steam for about 45 minutes. Do not overcook (but dont undercook!). Check thigh joint for doneness.
4. Garnish and serve Remove the chicken from the steam basket to a serving dish. Slice and cut into pieces. Take some of the water from steaming broth and pour over slices enough to moisten pieces.
In a large skillet, pour in 4 tbsp of vegetable oil and heat. While the oil heats, add the green onion and ginger mix and spread it evenly. Add a generous pinch of coarse salt. Once the oil starts to crackle, remove from heat (do not overcook the ginger). Spoon on top of the chicken and serve! |
