Ingredients: 2 tablespoons margarine or butter 1 onion, diced 1 clove garlic, minced 1 package hotdogs, diced into circles (Farmer John Beef is what we always used and you can substitute equivalent weight of "Lil Smokies" if you so desired) 1 regular can tomato soup 1 1/2 cans water (use the tomato soup can) 1 small can tomato paste salt and pepper to taste steamed rice for 4 people

Directions:Start steamed rice according to how you cook it.
Melt margarine or butter in a pan, add in the onion, garlic, and hot dogs. Saute to your desire. I like the onions to look transparent.
Add in the soup, cans of water, paste, pepper and salt. Bring to a boil, then turn down to a simmer, stirring occasionally until the rice is ready. Serve over steamed rice. Makes 4 servings. |

Notes: My mom and grandma both made this dish. I have absolutely no idea where it came from or if it was one of my grandma's concoctions. I made an alteration one day because I was out of tomato sauce. As it so happened, my mom had stayed home ill from work that day. I knew she had not eaten and sent some back over with my brother for her for dinner. My mom called me and I seriously thought it was to tell me it tasted 'funny'. Nope, she wanted to know what I had done different because she loved the change! This recipe is a bit dear to my heart right at this moment as I just signed the mortuary papers to have my mom cremated in the next hours. My kids love this dish as long as I don't make it onion heavy. So, the next time you need a hot meal and only have 20-25 minutes, test drive this one out!
