4-6 medium red skinned potatoes (unpeeled)
1-2 stalks celery (depending on taste)
2 green onions,
3/4-1 cup mayonnaise
1 tsp. yellow mustard
1 tsp. vinegar
Sugar to taste

Directions:
Directions:
Boil potatoes. Cool or refrigerate overnight. DO NOT PEEL. Cut into bite size pieces.
Finely chop celery, green onion. Add to potatoes

Dressing
Mix together mayonnaise, mustard, vinegar. Mix well and taste to see if you need a little sugar (I use white balsamic vinegar which is already slightly sweet.) Taste dressing and adjust as desired. Lightly salt potato salad, add dressing.
Serve chilled.

This is Grammie Hamm's basic recipe for potato salad, though the unpeeled red potatoes are my personal touch. She always cooked the potatoes with the skins on, then peeled them. Skins do contain some vitamins.
