3 c. blanched almond flour
2 tsp. sea salt
1 tsp. baking soda
1 T. ground cinnamon
1 tsp. ground nutmeg
1/4 c. grapeseed oil
1/2 c. Agave nectar
5 lg. eggs
3 c. grated carrots
1 c. raisins
1 c. walnuts, coarsely chopped

Preheat oven to 325 degrees F. Grease two 9 inch cake pans with grapeseed oil and dust with almond flour. I suggest parchment paper in bottom of pan if you want to make a layer cake.
In large bowl combine flour, salt, soda, cinnamon and nutmeg. In a medium bowl whisk together the oil, agave nectar and eggs. Stir the wet ingredients into the dry ingredients until thoroughly combined. Fold in the carrots, raisins and walnuts. Scoop the batter into the prepared pans.
Bake for 30-35 minutes, until a toothpick inserted in center comes out clean. Let cool in pan for 1 hour. Serve or assemble layer cake.
I used my cream cheese frosting recipe: 1/2 c. butter, 8 oz. cream cheese, 1 tsp. vanilla, and 1 lb. powdered sugar. Whip together butter and cream cheese, stir in vanilla. Mix in powdered sugar only until combined. Do not overmix!
