2 racks of baby back pork ribs
lemon slices
sliced onions
salt
lemon pepper
rib seasoning
water

Directions:
Directions:
Rip off heavy duty foil. Use 2 pieces per rib packet. Rinse ribs and slice into 3-rib portions. Put two rib portions on foil. season with salt pepper and seasoning. Add a sliced lemon and onions to top of each portion. Put in 2 TBS water. Seal packets.
Cook packets at 350 for 45 minutes or on grill- medium - until meat is shrinking back from rib bones.
Remove ribs from packets, throw away lemons and onions.
Return to grill or pan. Cook for another 15-30 minutes at 350 or medium grill, saucing during last 10 minutes. Cut ribs and serve with extra sauce.

This was my mom's recipe. She used to cook in the oven. When we moved to Anacortes, our house was sealed so tightly that the smoke alarms went off when we tried to cook in the oven, so we converted the recipe to the grill outside. Doesn't matter in Hawaii as the breeze blow the smoke from the house. My friend Steve Lee served this at a Skeet tournament in Germany and one of his friends apparently serves this in their restaurant in Arizona as Mary's ribs. The lemon and onions are the key ingredient.
