Grandma Joan's Raisin Bread Recipe

1 cup raisins
2 tsp. baking soda
1 cup boiling water

Place raisins & soda in glass bowl. Pour boiling water over and stir a bit.
The longer you leave this the darker the bread. About 30 minutes or so, while you assemble the remainder ingredients.

3/4 cup of sugar
1 egg
1 1/2 tsp. baking powder
1 1/2 cup flour
1 tsp. vanilla

Preheat oven to 350º.

Once raisin mixture is cooled add remainder of ingredients until combined.
Pour into greased (Pam) loaf pan. Bake for 50-60 minutes until toothpick
inserted into center is clean.

This has always been at the Lutschkin Christmas table since I became a member
of this family. It came from Auntie Alice (Joan's sister) who lived in Bermuda, which is Jay's birthplace.
It was usually Dad in the kitchen as he did most of the cooking. I tried to find the one picture I have of them both in the kitchen as it was a rarity.
