Slowcooker Beef Ragu Recipe

2 lbs beef stew meat
1/2 onion, chopped or pureed
3 cloves minced garlic
1 small can tomato paste
3 T. Chopped fresh oregano or 3 t. Dried oregano
1 T. Chopped fresh rosemary or 1 t. Dried rosemary
1 T. Fresh thyme leaves or 1 t. Dried thyme
Coarse salt and pepper
2 c. Beef broth
1/4 c. Soy sauce
2 T. Red wine vinegar
Sliced mushrooms
Carrots cut into chunks
Egg noodles, polenta, mashed potatoes

Directions:
Directions:
Place onions, garlic, herbs and tomato paste in bottom of slowcooker that has been sprayed with Pam. Stir together. Place mushrooms over top. Toss beef with salt and pepper. Place in slowcooker. Pour beef stock and soy sauce over top. Cook on low for 8 to 10 hours or high for 6 hours. Add carrots during last hour of cooking. About 20 minutes before serving make a slurry of 4 T. Flour and 1 cup of cold water and add to slowcooker. Continue cooking until thickened ((if you have been cooking on low turn up heat to high). Add 2 T. Red wine vinegar right before serving. Serve over egg noodles, polenta, or mashed potatoes.
