1 1/2 c. flour
1/2 tsp baking soda
1/8 tsp. salt
1/2 c. wheat germ
1/2 c. brown sugar
1/4 tsp. each - cinnamon and cardamon
1/2 c. egg substitute
1/4 c. nonfat buttermlk
1/4 c. vegetable oil
1 c. mashed ripe bananas

Directions:
Directions:
Combine first 8 ingredients in a bowl; set aside. Combine egg substitute, buttermilk and oil in large bowl. Stir well, and then stir in bananas. Add flour mixture, stirring just until moistened. Pour in a 8 1/2" x 4 1/2" x 3" loaf pan, coated with cooking spray. Bake at 350º for 45 minutes or until a toothpick inserted in center comes out clean. Let cool in pan ten minutes. Remove and cool completely on wire rack.
