4 c. coarsely chopped apples
2 c. sugar
2 eggs
1/2 c. vegetable oil
2 t. vanilla extract
2 c. flour
2 t. baking soda
2 t. cinnamon
1 t. salt
1 c. chopped walnuts
Directions:
Directions:
Combine apples and sugar and set aside. Beat eggs, oil and vanilla; mix flour, soda cinnamon, salt, and stir together. Add apple mixture and egg mixture, alternating. Stir in walnuts. Put in greased 13 by 9 by 2 pan.

Bake at 350º for 1 hour. Let cool completely before removing from pan. Can be served with whipped cream.
