6 medium potatoes, peeled and sliced thin
1 medium onion, finely chopped
1 cup celery, chopped
6 slices crispy bacon, crumbled
½ cup vinegar
½ cup water
½ cup sugar
2 tbsp. cornstarch
¼ tsp. salt
¼ tsp. pepper
3 hard cooked eggs, peeled and chopped coarsely

Cook potatoes and drain. Combine remaining ingredients (except eggs) in saucepan. Cook 20 minutes, stirring frequently. Pour over potatoes, add eggs and toss. Serve warm and refrigerate leftovers.
