5 lb. thin red-skinned potatoes, scrubbed
3 c. thinly sliced celery
⅓ c. honey
4 Tbsp. cumin seed
1 c. chopped red onion
1 c. cider vinegar
¼ c. Dijon honey
Salt and pepper

Directions:
Bring 4 quarts water to a boil in a large pot. Add potatoes; cover and simmer over low heat until tender, about 20-30 minutes. Drain and immerse in cold water. When cool, cut into chunks (1 ¼ in). Rinse onion with cool running water; drain well. In large bowl, combine onion, celery and potatoes. Mix vinegar, honey mustard, and cumin; pour over salad. Mix and season to taste with salt and pepper.
