1 1/4-oz package active dry yeast
1/4 c. evaporated milk, warm
1 tbsp sugar
1 c. butter or margarine
2 1/2 c. flour, sifted
1/2 tsp salt
4 egg yolks, slightly beaten
2 8-oz packages cream cheese, softened
1 egg, separated
1 c. sugar
1 tbsp flour
1 tsp vanilla
1/2 cup pecans, chopped
Confectioners sugar

Dissolve yeast in milk and add sugar. Cut butter or margarine into flour and salt. Add (4) egg yolks and yeast, mixing well. Divide dough into 2 parts. Roll each part to fit 9" x 13" x 2" pan. Place 1 part in bottom of pan. Cream together cream cheese, egg yolk, sugar, flour and vanilla until light and fluffy. Spread over dough in pan. Place second part dough on top of cheese mixture. Brush top with slightly beaten egg white and sprinkle with pecans. Cover and set aside to rise 2 hours. Bake at 350ºF. 20 minutes. Cool and sprinkle with confections sugar. Yield: 3 dozen squares
