Ingredients:  
10 lbs Catfish, diced and buffalo chopped
3 large Red onion, small dice
3 large Poblano, small dice
3 large Red Bell pepper, small dice
3 bunch Green onion, sliced small
4 stalks Celery, small dice
1 bunch Cilantro, chopped
4 cups Mayonnaise
3 cups Dijon mustard
1/4 cup Tabasco
1/4 cup Worcestershire
4 cups Panko or regular bread crumbs
4 cups Dill, chopped
1 cup Pickled jalapeņo, chopped
Salt and pepper to taste

Directions:
Directions:
Mix all together and portion at 3 oz. cakes
Dredge lightly in a pan of bread crumbs
Can be backed at 350 degrees for about 15-25 minutes, depending on thickness for friend in a skillet over heat in 1/4 inch canola oil
