2 T. butter
3 peeled and cubed potatoes
3 trimmed and chopped leeks
4 c. stock
1/2 c. milk or cream
Sour Cream
Chives

Directions:
Directions:
Melt butter in bottom of large pot. Add potatoes and leeks. Cook for about 3 minutes, until vegetables are softened.

Add 4 cups stock, bring to a boil. Cover and simmer until veggies are tender, about 20 minutes. Cool slightly, then puree (I use the blender).

Chill. Stir in ½ milk or cream just before serving

Serve with a dollop of sour cream and a sprinkling of chives.

This can also be served hot—a hearty winter dish
